Menu Planning Monday - May 17th

We were so busy chasing around our 1 year old while trying to put a garden in over the weekend that I didn’t even make it grocery shopping yet! We enjoyed lots of fresh air and it was a great workout too.  Our menu plan is heavily based on what's in the freezer and pantry this week. It will be great to use a few things up and it is usually quicker to prepare these meals than it is when I do a huge fresh fruits and veggies shopping adventure. I’m planning to stop by the store before the weekend to at least pick up salad greens and fresh broccoli. Here’s what’s on the menu at our house:

Monday – Chicken Enchiladas, Fajitas Style Beans - This one's ready to go in the freezer!  Last time I made two freezing one for a busy night.

Tuesday – Wild Salmon, Green Beans, Mashed Red Potatoes - Trying to incorporate more healthy fish into our diet.

Wednesday – Lentil Soup, Whole Wheat Grilled Cheese Sandwich Dippers - My 1 year old loves anything he can dip!

Thursday – Vegetable Stir Fry with Tofu, Brown Rice, Fresh Pineapple Slices

Friday – Grilled Bison Burgers with all the fixings, Baked Sweet Potato Fries

Saturday – Multigrain Pasta with Roasted Garlic Marinara, Steamed Brocolli

SundayEasy Frittata, Salad with Homemade Vinaigrette
