Watermelon with Mint - A refreshing summer potluck favorite!

Summertime is here and it’s the time of year when I’m most requested to prepare covered dishes to share at parties and activities. I don’t know about you, but I always struggle a little when trying to decide on the best dish to take along to a potluck.  I try to make something healthy and tasty that will appeal to a wide range of people, but also something my family will enjoy in case there aren’t other healthy items they will eat.

When we saw a huge crate of watermelon at Sam’s Club, my little guy was super excited and I thought watermelon would be perfect for one of our covered dishes for an upcoming potluck dinner.


I like to keep it simple, so I just cubed the watermelon and added finely chopped fresh mint from our garden which gave a surprising bright, fresh flavor to the sweet juicy watermelon. A fun twist on a summer favorite.

If you want to take Watermelon with Mint to your next potluck dinner, you’ll need:
Ingredients
Watermelon
This watermelon was huge!  We only needed half of it to fill our large oval bowl.

Mint
This is the pot of fresh mint that's on my patio.  I only used the leaves from a stalk or two.

Directions
You could get fancy and use cute cookie cutters or a melon baller, but I simply chopped the watermelon up and serve it in a big bowl, so easy. Enjoy!

Watermelon with Mint will be a cool, refreshing summer dish to take to the start of Vacation Bible School. Since a big salad bar is always provided, I’m also going to take baked ziti which should make for a complete meal not knowing what other goodies will show up!
