Menu Planning Monday - March 29

This is going to be another busy week with my husband still in and out traveling for work, Grandma’s birthday, and Easter! Although we won’t be doing a ton of cooking at home this week, I’m really looking forward to trying a new recipe:  Coconut Red Lentil Soup. It sounds flavorful and healthy; hopefully it’s really tasty too!  I love trying new recipes and it keeps our family from eating the same thing too often.  Where do you find new recipes to try?

Here’s what’s on the menu at our house:

Monday – Homemade Chicken Enchiladas Verde with a side of Black Beans and Salsa

Tuesday – Mixed Greens Salad with Grilled Chicken and Homemade Vinaigrette

Wednesday – Dinner Out to celebrate Grandma’s Birthday

ThursdayCoconut Red Lentil Soup (Trying a New Recipe from 101 Cookbooks Blog)

Friday – Whole Wheat Pasta with Roasted Garlic Marinara and a side of Roasted Asparagus

Saturday – Dinner at Grandparents House

Sunday – Easter Dinner at the Grandparents. Make Homemade Chocolate Covered Peanut Butter Eggs and Chocolate Covered Coconut Eggs. (Send extra homemade chocolate eggs and Easter candy with my husband to share at work!) :)
