I hope everyone had a Happy Mother's Day and enjoyed time with the family!
With the warmer weather here in PA, we've been giving our grill a real workout. We're also enjoying lots of fresh fruits, veggies, and loaded salads outside on the patio.
Even though we're super busy and don't always follow our menu plan perfectly, I'm trying to keep up with it. Menu planning really is a huge time saver and has virtually eliminated all those nights I don't know what to make for dinner! Here’s what’s on the menu at our house:
Monday – BBQ Grilled Chicken, Herbed Whole Wheat CousCous, Steamed Broccoli
Tuesday –Vegetable Stir Fry with Tofu, Brown Rice, Fresh Pineapple Slices
Wednesday –Wild Salmon, Veggie Lentils, Roasted Asparagus
Thursday –Spinach and Cheese Tortellini with Marinara Sauce, Salad with Homemade Vinaigrette
Friday –Homemade Whole Wheat Pizza Night, Chocolate Dipped Strawberries
Saturday –Black Bean Quesadillas with Salsa Dipper, Avocado Salad
Sunday –Smoked Turkey, Steamed Artichokes, Roasted Sweet Potatoes
