Menu Planning Monday - July 12th

The last two weeks have been a crazy whirlwind of visiting family and hosting house guests, so official meal planning went out the window. This week we’re back to the usual summer fun! And that means lots of fun in the sun, tasty homemade meals, and trying to use up all the veggies from our garden.

We have a ridiculous amount of zucchini and yellow squash from only two plants! So far, we’ve enjoyed grilled zucchini.  We also sautéed it with onions and mushrooms in soy sauce for an easy side dish. I’m definitely going to have to come up with more recipes and creative ideas to use all this zucchini. Here’s what’s on the menu:

Monday – Vegetable Lasagna (Baby Spinach, Zucchini, Yellow Squash, Baby Bella Mushrooms), Rosemary Focaccia Bread, Mixed Greens with Homemade Vinaigrette and Cherry Tomatoes from the garden – Veggie Lasagna is a family favorite and although it isn't the fastest dish to prepare, everyone enjoys the leftovers which makes my week a little easier. I have tons of fresh rosemary in the garden and want to try to make homemade focaccia bread too!

Tuesday – Baked Wild Salmon, Brown Rice, Lentils with Veggies

Wednesday – Leftover Buffet, Watermelon Slices

ThursdayBeef and Bulgur – Stuffed Zucchini Trying a New Recipe…Sounds Yummy!

Friday – Dinner Out – Visiting with Relatives

SaturdayVeggie Frittata, Black Bean Soup, Mixed Salad Greens with Homemade Vinaigrette

Sunday – Grilled Chicken and Mixed Salad Greens with Homemade Vinaigrette

My husband is requesting homemade zucchini bread, so if I can find a good recipe that will be on the menu too.
