Menu Planning Monday - April 26

We’re back from our vacation! It was great having a couple weeks off from cooking, but after two weeks of eating out I’m definitely craving our healthy homemade meals. Now that this weeks menu plan is complete, it’s back to the unglamorous part of traveling...unpacking our big pile of suitcases and tackling that mountain of dirty laundry! :)

Here’s what’s on the menu at our house:

MondayLemon-Herb Roasted Chicken, Tomato Lentil Cous Cous, and Steamed Broccoli
     (Shred leftover chicken and make Homemade Chicken Stock)

Tuesday – Homemade Chicken Enchiladas, Chimichurri Rice, and Black Beans with Salsa

Wednesday – Homemade Chicken Noodle Soup, Mixed Greens Salad with Vinaigrette

Thursday – Mixed Vegetable Stir Fry with Tofu and Brown Rice

Friday – Grilled Bison Burgers with all the fixings, Roasted Asparagus, Baked Sweet Potato Fries

SaturdayBlack Bean Lime Chili with Whole Wheat Cous Cous (Special Request from my Husband)

Sunday – Spaghetti with Meatballs, Steamed Artichokes, and Mixed Greens Salad
