Menu Planning Monday - June 14th

It's hot, hot, hot and I'm not just talking about the weather! My mom stopped by the farmers market in search of a jalapeno pepper and returned with a huge basketful of peppers for only $1. She has what my husband calls “tender tastebuds” and doesn’t even like spicy dishes, so we had to laugh at her massive stash of hot peppers. She's sharing jalapenos with everyone that visits and we visited…so here’s my seemingly endless supply of jalapeno peppers (minus a few that we used in a yummy Mexican Bean Salad I whipped together for a healthy snack). So I’m trying to figure out what to do with all these hot peppers? Let me know if you have any suggestions, otherwise I think we’ll be eating all kinds of fun Mexican dishes this week to use them up!

Monday – Mexican Tostadas, Black Beans, Fresh Salsa, Homemade Dark Chocolate Almond Clusters

Tuesday – Roasted Red Pepper, Mozzarella, and Basil Ravioli with Roasted Garlic Marinara Sauce, Mixed Greens Salad with Homemade Vinaigrette, Strawberries

Wednesday – Chicken Tortilla Soup, Blue Corn Chips, Homemade Guacamole and Salsa, Cantaloupe

Thursday – Ground Turkey and Three Bean Chili with toppers (Cheese, Onion, Salsa, Avocado, Lime Wedges, Cilantro)

Friday – Homemade Whole Wheat Pizza topped with Sliced Garlic, Fresh Basil, Baby Bella Mushrooms

Saturday – Attending my Niece's 3rd Birthday Party

Sunday – Father’s Day Dinner – Daddy’s Choice!


I’m also going to try a new recipe to make homemade granola for breakfast this week. I’ve never tried to make my own granola before, but this recipe sounds really tasty:

  2. Hi Amy - I'm really not that organized. I just love to eat healthy and with a 1 year old running around writing out a meal plan and linking up with Menu Plan Monday really helps make meal times so much easier. :)
